How was your weekend?! Mine was divine. Plenty of time with friends, a fundraiser, some CrossFit, and a Sunday of cooking and cleaning. I love ending a weekend with a clean house, all meals prepped for the week, and plenty of time to wind down.
Onto scenes from the weekend (well, scenes since Thursday):
Congrats to Rich Froning for winning the CrossFit Games/title of Fittest Man On Earth for the THIRD year in a row! I started reading Rich's brand new book late last week and I love it! Such a big part of it is about how his faith in God got him to this point. Refreshing!
So, my one trashy show addiction is Real Housewives of New Jersey. Y'all... I cannot get enough. I literally have my jaw on the floor by the end of every episode. Let's not even talk about the "and next time on RHONJ..." preview of the next week's show after every episode. OH. EM. GEE. The best part about this? RHONJ is kinda the "thing" for my mama and I. We record it and watch it together every week! Last week, my mama invited me over to watch and she made a Paleo version of her famous Poppa's soup recipe. YUM!!!

After CrossFit Thursday night, a few of us went to Papa's for pizza and a cider. This would be my CrossFit friend, Tyler, and I doing handstands in the streets of downtown Fort Smith. SO gangster, I know!
Saturday morning I met my friend Michele at the farmers market in Fort Smith! We both scored BIG! However, my trip wouldn't have been complete without this... The Movie Lounge in Fort Smith apparently has a food truck {Who knew?!} and they were at the farmers market Saturday morning selling these AMAZING chorizo and egg tacos with salsa for just $3. I couldn't resist! It was the perfect pre-team WOD meal.
Saturday morning's haul! Fresh flowers, eggplant, baby cucumbers, green tomatoes, regular tomatoes, and peaches. I also scored some grass-fed ground beef and a $5 bucket of over-ripe peaches.....
Those $5 peaches turned into this. Which later {on Sunday} turned into.......
THIS! A homemade peach cobbler! It was INCREDIBLE {if I do say so myself...} Yes, I realize I'll be living in a bikini for an entire week in the very near future. I also realize that no extra few pounds or a slightly more prepared bikini body could taste as sweet as this cobbler... To be fair, it's a "skinnier" version than what was called for. Not nearly as much sugar, lots of cinnamon {heart healthy}, almond milk instead of regular, etc. Even if it wasn't quite as guiltless, I'd still demolish it. Moderation, people... Moderation. {Pray for me to have a little extra self-restraint this week, please!}
After the farmers market, a team WOD, and some Saturday errands and relaxation, a group of us went to dinner and then to a fundraiser to support our CrossFit coach! A local business owner came up with this idea as a fundraiser for cancer research - she had people nominate "hotties" that went through the selection process to get a spot in the "hottie calendar." AMAZING idea! Our Coach Nick is the best hottie in my {slightly biased} opinion. After the event, we all went back to my place to play Cards Against Humanity... A slightly inappropriate, but hilarious card game! We had a really great time!
- Eggplant "lasagna" {pasta free} with grass-fed ground beef, portobello mushrooms, spinach, tomatoes, and fresh mozzarella
- Cucumber and tomato salad
- Egg "muffins" for breakfasts
- Grilled asparagus
- Spicy sweet potato "fries"
- Peach cobbler
At about 9:00, I was sitting on my couch folding laundry when someone BANGED on my door. It scared me to death, and I'm pretty sure I literally jumped up! It was just the newly engaged stopping by to show me le bling! Congrats again, you two!
Here we are at Monday! It always comes around so soon. This perfectly describes my Monday morning:
Have I mentioned that I'll be lying on the beach in just a few short days?! My sweet mama called this morning to surprise me by telling she'd just booked our room for an additional night {this Saturday} so that we could leave early, early this Saturday morning and get to spend all day Sunday on the beach! We'd originally planned to leave sometime Saturday and drive just part of the way and stay the night, just to drive the rest of the way Sunday. So, this will mean ALL DAY Sunday on the beach. WAKING UP Sunday on the beach! Oh, how I love that lady. So, if you need me next week {either Saturday, Sunday, Monday, Tuesday, Wednesday, Thursday, or Friday} you know where to find me;) I will try to get some more blogging in before my trip, but I can't WAIT to share beach pictures, food, shopping, and all of our adventures with y'all!
